Crème de Bergamote , 18%, Bergamot Orange Cream

Bergamot is the fruit of the bergamot tree a tree which is mainly grown in Italy. Bergamot oranges are the result of crossing a bitter orange variety with a lime variety. Its flesh is slightly acidic and bitter. Only the zest of the orange is used in order to extract a natural essential oil from it which is used in the renowned Earl Grey tea and also in bergamote de Nancy sweets. Due to the acidic characteristic of bergamot essential oil our Bergamot Orange Cream has had conferred on it a fresh somewhat lemony taste but it also has a more spicy – even smooth – note.

Crème de Mûre , 18%, Blackberry Cream

To make our Blackberry Cream, we use an ultra-high quality natural flavouring, which comes from blackberries. Then we add anthocyanins -- which are found in grape skin -- to our cream, in order to confer on it its intense colour.
The recipe for this product has evolved as techniques have developed -- about 15 years ago, we made our Blackcurrant Cream using macerated blackberries. This technique did not bring out the fruit's true flavours. The extraction process employed to obtain the natural flavours of the blackberry is much more effective and it brings out all of the taste of the small fruit.

Dijon Crème de Cassis (blackcurrant cream) , 20%

As is the case with all of our Crèmes de Cassis (blackcurrant creams), for our Crème de Cassis 20% we use the most prestigious variety of blackcurrant -- the "Noir de Bourgogne" (black Burgundy, literally) variety, which is only grown in the Côte d'Or department (county) in Burgundy. These blackcurrant berries are macerated in a water-alcohol solution for about 10 weeks in order that all of their aromas are extracted from them. The juice containing alcohol thus obtained is then known as an "infusion". The infusion is the basic ingredient in Crème de Cassis, to which is added white sugar. Our Crème de Casse with 20% alcohol content is our top-of-the-range due to the very high percentage of blackcurrant it contains. It is our flagship product and our best-selling product, out of all of our products. Our ancestral know-how means that this product is of the very highest quality and means that this Crème can be employed for uses as varied as cooking, desserts and the very popular "white wine-cassis" aperitif drink. We received an award (gold medal) for this product at the Drinks Business Liqueurs Masters 2011. "A complex nose, subtle, fresh fruit, rich in the mouth, a bitter note, a pleasant liveliness, and an intense fruity finish", according to the "Le Point" French news magazine, 17/11/2011.

Dijon Crème de Cassis (blackcurrant Cream), , 20%, by Gérard Briottet

As is the case with all of our Crèmes de Cassis (blackcurrant creams), for our Crème de Cassis by Gérard Briottet with 20% alcohol content we use the most prestigious variety of blackcurrant -- the "Noir de Bourgogne" (black Burgundy, literally) variety, which is only grown in the Côte d'Or department (county) in Burgundy. These blackcurrant berries are macerated in a water-alcohol solution for about 10 weeks in order that all of their aromas are extracted from them.
This cream is the only one on the market produced using only the juice which results from the maceration process. This pure juice contains the highest level in fruit, and it reveals all the aromatic power of the fruit -- the blackcurrant flavours veritably "explode" in one's mouth.
This exceptional cream was created a dozen years ago by Gérard Briottet (a fifth-generation Briottet in the business), in order to satisfy his ever-more demanding clientele.
This premium Crème will enthuse cassis connoisseurs.
It is only sold in two types of 70 cl bottle:
- Type C bottles with a colour label, with a one-bottle presentation case, supplied.
and:
- Type K carafes with colour labels.

Liqueur de Coing , 18%, Quince Liqueur

The quince is the fruit of the quince tree. Pear-shaped and large, it is cottony on the surface, yellow and very fragment when ripe. Our Quince Liqueur is obtained using fresh quinces, picked in the south of France. They are harvested when fully mature, towards the end of October, and are then left to macerate for about six weeks. Distillation then takes place and the eau de vie thus obtained is aged in demijohns. Sugar and water is added, which enables us to obtain a tasty liqueur which will bring back fond memories of grandmother's jams and jellies.

Prunelle , 40%, Sloe Liqueur

Sloes are small fruit with stones which are black tinged with blue and come from sloe shrubs (which are also known as blackthorn), and are found in hedgerows exposed to the sun. Even though they are ripe in September, they are only picked after the first frost of winter, which makes them softer and less bitter. To produce Briottet's Sloe Liqueur, what are in fact used are the sloe's stones, with the skin and flesh removed. The stones are then dried and are macerated in extra-fine alcohol for almost a year. The powerful and authentic taste which is produced by using the stones is then tempered through the careful addition of not too much and not too little sugar. Sloe Liqueur is perfect as an after-dinner drink.

Crème de Pêche de Vigne , 18%, Wild Peach Cream

White "vine" peaches come -- in our region -- from specific plantations which are located beside vineyards. The maceration production process -- the same as that used for grapes -- takes the extreme fragility of the fruit into account. Said fragility explains why so little "vine" peaches are harvested each year, making it a rare and sought-after product. The high quality of our Special Peach Cream is down to us using a "vine" peach variety which is subtle yet powerful and which is only harvested in our beautiful Burgundy region.

The combination of the finest ingredients and our expertise enables us to produce liqueurs and creams of the highest quality.
We have more than 50 different liqueurs: the classic peach liquor (crème de pêche), raspberry liquor (crème de framboise), cherry liquor or more original ginger liquor (liqueur de gingembre, rhubarb liquor (liqueur de rhubarbe), bergamot liquor (liqueur de bergamote)...

The difference between creams and liqueurs arises out of the proportion of sugar employed -- a liqueur contains 100 grammes of sugar per liter at least, versus 250 grammes at least as regards a cream.

The exception that proves the rule is Dijon Crème de Cassis, which contains a minimum of 400 grammes of sugar per liter.
